Sushi (すし, 寿司, 鮨, 鮓; pronounced [sɯɕiꜜ] or [sɯꜜɕi] ) is a traditional Japanese dish made with vinegared rice (鮨飯, sushi-meshi), typically seasoned with sugar and salt, and combined with a variety of ingredients (ねた, neta), such as seafood, vegetables, or meat; raw seafood is the most common, although some may be cooked. While sushi has numerous styles and presentations, the current defining component is the vinegared rice, also known as shari (しゃり), or sumeshi (酢飯). The modern form of sushi is believed to have been created by Hanaya Yohei, who invented nigiri-zushi, the most commonly recognized type today, in which seafood is placed on hand-pressed, vinegared rice. This innovation occurred around 1824 in the Edo period (1603–1867). It was the fast food of the chōnin class in the Edo period. Sushi is traditionally made with medium-grain white rice, although it can also be prepared with brown rice or short-grain rice. It is commonly prepared with seafood, such as squid, eel, yellowtail, salmon, tuna, or imitation crab meat (surimi). Certain types of sushi are vegetarian. It is often served with pickled ginger (gari), wasabi, and soy sauce. Daikon radish or pickled daikon (takuan) are popular garnishes for the dish. Sushi is sometimes confused with sashimi, a dish that consists of thinly sliced raw fish or occasionally meat, without sushi rice. Today, sushi is considered one of t…

Analysis of Sushi Rice: Preparation Techniques, Physicochemical Properties and Quality Attributes. This study explores, the multifaceted aspects of sushi rice preparation is explored, including washing, soaking and cooking processes, and their impact on the texture and sensory properties of rice. Selenio rice, a premium short-grain rice, was analysed for variations in amylose content and viscosity profiles. The study allows to highlight how the rice's compositional characteristics, particularly the amylose-to-amylopectin ratio, influence gelatinisation and cooling behaviour. The effects of soaking duration, vinegar mix composition, and water-to-rice ratio on texture profile analysis (TPA) a…

Bomba rice (Spanish: arroz bomba; Valencian: arròs bomba) is a short-grain variety of rice (Oryza sativa L.), primarily cultivated in the eastern parts of Spain. It is commonly used in paella and other dishes in Valencian cuisine, and is often referred to as Valencia rice. Bomba is considered a short to medium grain variety of rice, but unlike other short grain varieties, it has a relatively low content of Amylopectin, meaning it does not become sticky when cooked (like Sushi rice) nor does it thicken the cooking fluid (like Arborio rice).

Cooked rice refers to rice that has been cooked either by steaming or boiling. The terms steamed rice or boiled rice are also commonly used. Any variant of Asian rice (both indica and japonica varieties), African rice or wild rice, glutinous or non-glutinous, long-, medium-, or short-grain, of any colour, can be used. Rice for cooking can be whole-grain or milled. Cooked rice is used as a base for various fried rice dishes (e.g. Chinese fried rice, Thai fried rice), rice bowls/plates (e.g. bibimbap, chazuke, curry rice, dal bhat, donburi, loco moco, panta bhat, rice and beans, rice and gravy), rice porridges (e.g. congee, juk), rice balls/rolls (e.g. gimbap, onigiri, sushi, zongzi), as well…

Gimbap ( ; Korean: 김밥; lit. 'seaweed rice'; IPA: [kim.p͈ap̚]), also romanized as kimbap, is a Korean dish made from bap (cooked rice), vegetables, and optionally, cooked seafood or meat rolled in gim—dried sheets of seaweed—and served in bite-sized slices. Reference works describe gimbap as developing from Japanese norimaki, introduced to Korea during the period of Japanese colonial rule, while also noting that Korea had earlier traditions of wrapping rice and side dishes in seaweed, such as bokssam, from the Joseon era, which are sometimes cited as precursors rather than direct equivalents. However, the style of rolling seaweed into a ball on bamboo mat and cutting it to eat is generally a…

In Japanese cuisine, a sushi oke (寿司桶), also known as a hangiri, is a round, flat-bottomed wooden tub or barrel used in the final steps of preparing rice for sushi. Traditional hangiri are made from cypress wood bound with two copper bands. They range in diameter from about 30 cm (12 in) for use at home, to 1 m (3 ft 3 in) for use in a restaurant. A shamoji wooden paddle is used with a hangiri to dress and to cool the rice. After cooking, the rice is transferred to the hangiri where it is tossed with a dressing made of rice vinegar, sugar, and salt. When the mixing is complete, it is covered with a cloth and allowed to cool.

Rice is a cereal grain and, in its domesticated form, is the staple food of over half of the world's population, particularly in Africa and Asia. Rice is the seed of the grass species Oryza sativa (Asian rice)—or, less commonly, Oryza glaberrima (African rice). Asian rice was domesticated in China some 13,500 to 8,200 years ago; African rice was domesticated independently in West Africa about 3,000 years ago. Rice has become commonplace in many cultures worldwide; in 2023, 800 million tons were produced, placing it third after sugarcane and maize. Only some 8% of rice is traded internationally. China, India, and Indonesia are the largest consumers of rice. A substantial amount of the rice p…

Japanese rice refers to a number of short-grain cultivars of Japonica rice including ordinary rice (uruchimai) and glutinous rice (mochigome). Ordinary Japanese rice, or uruchimai (粳米), is the staple of the Japanese diet and consists of short translucent grains. When cooked, it has a sticky texture such that it can easily be picked up and eaten with chopsticks. Outside Japan, it is sometimes labeled sushi rice, as this is one of its common uses. It is also used to produce sake. Glutinous rice, known in Japan as mochigome (もち米), is used for making mochi (餅), Okowa, and special dishes such as sekihan. It is a short-grain rice, and it can be distinguished from uruchimai by its particularly sho…

Rice Cake Production using Long‐grain and Medium‐grain Brown Rice. ABSTRACT Puffing of rice cakes using both long‐grain and medium‐grain brown rice was studied. The effects of tempering moisture, heating temperature, and heating time on various rice cake quality attributes were investigated. A greater specific cake volume was obtained at a lower tempering moisture, higher heating temperature, and longer heating time for long‐grain brown rice. For medium‐grain rice, a higher tempering moisture yielded a larger specific cake volume. The lightness of rice cakes correlated well with their expansion; the less expanded cake always had a lighter color. Medium‐grain brown rice also produced cakes t…
