Pełniejszy materiał źródłowy / excerpt
Hydrolyzed vegetable protein (HVP) products are vegetable-origin food products created with and made palatable by the hydrolysis of protein. They are solid foods, generally available to the consumer in the form of a powder, with a savory taste (known as umami) somewhat like broth or bouillon, often used as an additive for flavour. Regarding the production process, a distinction can be made between acid-hydrolyzed vegetable protein (aHVP), enzymatically produced HVP, and HVP created with other seasonings (for example, fermented soy sauce). Hydrolyzed vegetable protein products are particularly used to round off the taste of soups, sauces, meat products, snacks, and other dishes, as well as for the production of ready-to-cook soups and bouillons.

Soy sauce (sometimes called soya sauce in British English) is a liquid condiment of Chinese origin, traditionally made from a fermented paste of soybeans, roasted grain, brine, and Aspergillus oryzae or Aspergillus sojae molds (kōji). It is recognized for its saltiness and pronounced umami taste. Soy sauce was created in its current form about 2,200 years ago during the Western Han dynasty of ancient China. Since then, it has become an important ingredient in East and Southeast Asian cooking as well as a condiment worldwide.

Sequential physical field pretreatment modulates tilapia soup quality: a multi-omics investigation of processing order to flavor and nutrition.. Traditional tilapia soup production faces critical bottlenecks: low soluble solids release from fish tissue into broth, insufficient nutrient leaching, and severe flavor loss. Although individual physical treatments enhance soup quality, the sequential effects of distinct physical fields remain poorly characterized. This study investigated the effects of two physical field processing sequences (colloid milling followed by ultrasonication, CMUFS, and ultrasonication followed by colloid milling, UCMFS) on the microstructure, nutritional composition,…

Processed animal proteins in poultry nutrition: nutritional value, digestibility, safety, and applications.. Processed animal proteins (PAPs) are concentrated protein ingredients derived from animal by-products through rendering or hydrolytic processes and are increasingly reconsidered in poultry nutrition due to their nutritional and sustainability advantages. This review provides a comprehensive evaluation of the composition, digestibility, functional properties, safety, and practical applications of PAPs in poultry feeding systems. Nutritional value varies considerably depending on raw material origin and processing conditions, with excessive heat treatment reducing amino acid availabili…

Characterization of enzyme-hydrolyzed vegetable proteins from mung bean, soybean, and pea and their roles in the formation of volatile compounds by thermal interaction with reducing sugars.. The development of plant-based foods with desirable meaty and savory flavors remains challenging due to differences in protein composition and flavor precursors compared with animal proteins. The objective of this study was to systematically compare the physicochemical properties and flavor-producing potentials of enzyme-hydrolyzed vegetable proteins (EVPs) derived from mung bean, soybean and pea. Degree of hydrolysis, molecular weight distribution, and free amino acid profiles were determined, and vola…

Hydrolyzed protein is a solution derived from the hydrolysis of a protein into its component amino acids and/or peptides. Hydrolyzing down to the amino acid level is most commonly achieved using prolonged heating with hydrochloric acid. Hydrolyzing down to the peptide level can be achieved with an enzyme such as pancreatic protease to simulate the naturally occurring hydrolytic process.

ReBiA-Robotic Enabled Biological Automation: 3D Epithelial Tissue Production.. The Food and Drug Administration's recent decision to eliminate mandatory animal testing for drug approval marks a significant shift to alternative methods. Similarly, the European Parliament is advocating for a faster transition, reflecting public preference for animal-free research practices. In vitro tissue models are increasingly recognized as valuable tools for regulatory assessments before clinical trials, in line with the 3R principles (Replace, Reduce, Refine). Despite their potential, barriers such as the need for standardization, availability, and cost hinder their widespread adoption. To address these…
