Olive oil is a vegetable oil obtained by pressing whole olives (the fruit of Olea europaea, a traditional tree crop of the Mediterranean Basin) and extracting the oil. It is commonly used in cooking for frying foods, as a condiment, or as a salad dressing. It can also be found in some cosmetics, pharmaceuticals, soaps, and fuels for traditional oil lamps. It also has additional uses in some religions. The olive is one of three core food plants in Mediterranean cuisine, with wheat and grapes. Olive trees have been cultivated around the Mediterranean since the 8th millennium BC. In 2022, Spain was the world's largest producer, manufacturing 24% of the world's total. Other large producers were…

Cooking oil (also known as edible oil) is a plant or animal liquid fat used in frying, baking, and other types of cooking. Oil allows higher cooking temperatures than water, making cooking faster and more flavorful, while likewise distributing heat, reducing burning and uneven cooking. It sometimes imparts its own flavor. Cooking oil is also used in food preparation and flavoring not involving heat, such as salad dressings and bread dips. Cooking oil is typically a liquid at room temperature, although some oils that contain saturated fat, such as coconut oil, palm oil and palm kernel oil, are solid. There are a wide variety of cooking oils from plant sources, such as olive oil, palm oil, so…

PAM is a cooking spray currently owned and distributed by ConAgra Foods. Its main ingredient is canola oil. PAM is marketed in various flavors, such as butter and olive oil, meant to impart the flavor of cooking with those ingredients. PAM also markets high-temperature sprays formulated for use when grilling, etc., and one containing flour suitable for dry-cooking as in baking. PAM is marketed as a nominally zero-calorie alternative to other oils used as lubricants when using cooking methods such as sautéing or baking (US regulations allow food products to claim to be zero-calorie if they contain fewer than 5 calories per Reference Amount Customarily Consumed and per labeled serving, and th…

1001 Uses for Olive Oil. We begin in the kitchen in this chapter, discussing olive oil’s use in dressing and preparing food, and we focus on the safety of using olive oil for cooking. Cosmetics and soaps have used olive oil as a base, and it has been used in religious practices and sporting events for millennia. The chemical process of soap making is featured.

Cooking with Extra Virgin Olive Oil. Mediterranean cultures have used Extra Virgin Olive Oil (EVOO) as the only source of cooking oil for centuries, with their diet showing the highest amount of scientifically proven health benefits. However, there is a common misconception that EVOO is not suitable for cooking given its relatively lower smoke point, despite no scientific evidence that support this. This chapter aims to provide an overview of how EVOO is healthier, safer, and more stable to cook with than other common edible oils. Furthermore, this chapter aims to present EVOO’s suitability for use on Teflon coated pans, which is another common myth.

Cooking spray is a spray form of an oil as a lubricant, lecithin as an emulsifier, and a propellant such as nitrous oxide, carbon dioxide or propane. Cooking spray is applied to frying pans and other cookware to prevent food from sticking. Traditionally, cooks use butter, shortening, or oils poured or rubbed on cookware. Most cooking sprays have less food energy per serving than an application of vegetable oil, because they are applied in a much thinner layer: US regulations allow many to be labelled "zero-calorie"; in the UK sprays claim to supply "less than 1 calorie per serving". Popular US brands include Pam, Crisco, and Baker's Joy. Sprays are available with plain vegetable oil, butter…

Vegetable oils, or vegetable fats, are oils extracted from seeds or from other parts of edible plants. Like animal fats, vegetable fats are mixtures of triglycerides. Soybean oil, canola oil, grapeseed oil, and cocoa butter are examples of seed oils, or fats from seeds. Olive oil, palm oil, and rice bran oil are examples of fats from other parts of plants. In common usage, vegetable oil may refer exclusively to vegetable fats which are liquid at room temperature. Vegetable oils are usually edible and are generally recognized as safe (GRAS) by the United States Food and Drug Administration (FDA). There is no evidence that seed oils are unhealthy. Vegetable oils have been used for thousands o…

Formation Mechanisms, Molecular Pathways, Mitigation Strategies, and Indoor Safety Risk Analysis of Cooking Oil Fumes.. Cooking oil fumes (COFs) are major pollutants generated during thermal food processing, with emissions rising rapidly due to urbanization and the expanding catering industry, posing significant risks to indoor air quality and human health. This review systematically examines the formation mechanisms, physicochemical properties, and environmental and health impacts of COFs. Their formation involves primary processes such as thermal oxidation, cracking, Maillard reactions, and water vaporization, alongside secondary reactions where volatile organic compounds (VOCs) contribut…

Traditional Dairy and Olive Food Preferences Are Associated with Mediterranean Diet Adherence in Cyprus.. The Mediterranean diet is recognised as one of the healthiest dietary patterns worldwide; however, adherence has declined even within Mediterranean populations. This study investigated Mediterranean diet adherence and examined its associations with preferences for traditional dairy products and olive-related products among adults participating in a study in Cyprus. A cross-sectional online survey was conducted among 273 adults using a structured questionnaire that included sociodemographic and lifestyle characteristics, the 14-item Mediterranean Diet Adherence Screener (MEDAS), and ques…

The Ethnobotanical Heritage of Olea europaea L. in Italy: Continuity of a Millenary Mediterranean Tradition.. The olive tree ( Olea europaea L.) is a quintessential symbol of the Mediterranean basin, representing a profound intersection of ecological adaptation, agricultural evolution, and cultural identity. Italy, where the olive has shaped dietary habits, traditional medicine, folklore, and landscape from prehistory to the present, serves as a primary macro-region for studying the co-evolution of human societies and this iconic plant. In this vein, this paper examines the ethnobotanical trajectory of O. europaea on the Italian peninsula through an analysis of traditiona…
